Parchment – a solution for all kitchens

We are spending more time at home than we ever have. For many of us this is a time to rediscover cooking as a way to express our creativity, stay connected, and bring our families comfort.

But don’t take our word for it. Chef Fabrice Morel of the gastronomic restaurant “Hostellerie du Périgord” in France utilizes parchment frequently for multiple cooking and baking applications. Chef Morel recommends the papillote for home use.

What is a papillote?

Papillote is a French cooking term for ‘in paper’. The food is placed on parchment which is folded to form an airtight parcel. When the food comes up in temperature during the cooking process, the parcel allows the food inside to be steamed.

Find below a quick demo on how to make a simple papillote; which can be applied to a variety of foods (fish, fruits, vegetables). Once the papillote is assembled, you can bake it in the oven or the microwave (cooking time varies on type and quantity of food in papillote).

For this fish papillote, Véronique cooked it for three minutes in the microwave on high.

GVP is a baking paper made out of 100% cellulose with no additives. It can be used up to 220°C/428°F, making it ideal for most cooking and baking processes.

  • Because it offers a complete grease barrier ; GVP saves cleaning time and allows increased hygiene by protecting cooking instruments
  • Its release properties help to execute any dish perfectly
  • But what makes it great for papillote cooking is that it is extremely water resistant; therefore a precious ally in humid cooking processes like steaming and papillote cooking

GVP is biodegradable and produced from responsibly sourced and renewable wood pulp, certified according to Forest Stewardship Council® FSC® standards. Most of its variants are certified for TÜV Austria OK Compost HOME use.
